Wine is in essence a product made by locals using local produce (fruits) to be appreciated
with a spirit of hospitality. As such, the Gassan Toraya Winery has been committed since
its establishment to make its wines by carefully selecting only fruits from Yamagata prefecture.
Every bottle is made with care using only the highest quality Yamagata grapes. Grapes are selected on quality-based criteria from the winery’s own vineyard and other contracted local vineyards to produce wines with a unique Yamagata taste.
With the motto of “Wine and climate are a whole,” all ingredients are locally produced. No imported wine or fruits are used, and all grapes and fruits used are freshly harvested. The winery’s own vineyard and eight other contracted vineyards form the Hazukikai association. It does regular training and holds local seminars, giving technical guidance on cultivation while thoroughly studying fruit thinning to develop high quality grapes of high sugar content.
Yamagata prefecture is Japan’s leading production area for cherries. In the center of it towers the 1,980 meter tall Mt. Gassan, at the foot of which stands the Gassan Toraya Winery located in Nishikawa Town. Due to the nature of the land, a basin surrounded by mountains, the distinction between the seasons there is quite pronounced. That and the high difference in temperature between night and day makes it possible to cultivate seasonal grapes of high quality.
This white wine with a balance of sweetness and acidity has the distinctive sweet aroma of Delaware grapes.
